In order for these protein powders to be obtained, fresh pasteurised skim milk has undergone ultra-filtration process which retains proteins in their natural state and at the same ratio as in liquid milk. All of the above-mentioned ingredients are suitable for use in all kind of cheese applications as they are highly soluble products with very good emulsifying, water binding and whipping properties. They have excellent amino acid profile and high protein content, while also being low in fat, cholesterol and lactose.
